Khasta Kachori, also known as Kachauri, is a traditional snack in North India. It is served especially at festivals and wedding feasts. Khasta Kachori are ‘crisp’ (savoury) pastry shells that are not served with a meal like the standard poori kachauries. They can be prepared well ahead of time and stored in airtight containers. They stay crisp for weeks.
